Baked Gnocchi with Cherry Tomatoes, Chicken Sausage and Mozzarella

Ingredients

Directions

  1. Add 2 pints of cherry tomatoes to a casserole dish along with about 2 tablespoons of oil from the marinated mozzarella balls (be sure to get all the garlic and herbs at the bottom!).
  2. Season, cover and roast at 350 for about 15 minutes or until they are soft enough to burst with the back of a spoon or a potato masher.
  3. Add a handful of torn fresh basil, 2 small packages of refrigerated gnocchi; toss to coat.
  4. Top with 2 to 3 chopped smoked Italian chicken sausage links and return to oven for another 12 to 15 minutes uncovered.
  5. If you don't want too much sausage grease at the end you can crisp it in a skillet then drain the fat and add it with the mozzarella in the next step instead.
  6. Top with reserved marinated mozzarella (torn into pieces) and bake for another 5-7 minutes, until melted and bubbly.
  7. Dab any sausage grease off the top with a paper towel if you want and top with more fresh basil.
  8. Let sit for like 5 mins before serving.
